Gluten Free Peanut Butter Cookies

I wanted to share a recipe I first tried when I thought I needed to be gluten free and seemed to be a big hit yesterday at the farms family day pot luck. T and I were gifted a jar of mixed nut butter so that is what I used for the recipe yesterday, but normally I use natural peanut butter. I have been choosing the peanut butter that you can make at the grocery store using the machine provided or the store has some made up for you. I actually find its cheaper by the ounce this way than the organic peanut butter or natural peanut butter you can buy. When I say natural I don’t mean the peanut butter that still has the added sugar and oils in it. If you shop at Costco I really like the Kirkland brand organic peanut butter that comes in a set of two. They are huge jars for the price! To make the cookies you literally mix all the ingredients together and then by one tablespoon place mixture on an ungreased or parchment paper covered pan. Press down with a fork to make a Criss Cross, shake a little coarse sea salt on the top and then pop in the oven at 350. Cook for 10 minutes turning the pan half way through. When you take them out the cookies should look slightly brown. Do not remove immediately from the pan, let them set up first before removing to a cooling rack. That’s it. The cookie is chewy and it will be hard to eat just one. I don’t have any pictures of the cookies I made yesterday, but they were not perfect in shape and size. I learned a wonderful lesson from watching a British Chef one time who said something to the fact that if it looks perfect its not home made! If you try these I hope they become a favourite of your families like they have become T and I’s.

*Gluten Free Peanut Butter Cookies*

1 Cup peanut butter or nut butter of choice

1 Cup of sugar

1 large egg

1 teaspoon of pure vanilla extract

Coarse Sea Salt for sprinkling.
