Yes, you can buy it from the grocery store but it was so much fun making our own yesterday. When T and I make recipes from scratch we know exactly what is going into our food, there are no preservatives, no ingredients we can’t spell or say and 99% of the time we don’t come away feeling bloated or miserable. This granola didn’t take too long to put together and we could have played with the ingredients depending on what we had had in our small pantry. T had some in his Greek yoghurt this morning while I sampled it on my oatmeal. It tasted good. We did use salted pepitas (shelled pumpkin seeds) so may have been able to omit the salt that was required in the original recipe. I looked up several recipes for home made granola and slightly adapted the one I found by Alyssa Rivers which is a sweet and savoury granola. Here is the ingredients list and instructions below:
Ingredients:
4 cups old fashioned oats
1 cup sliced almonds
1 cup roasted pepitas with sea salt
½ cup shredded unsweetened coconut
2 Tablespoons cinnamon
1 teaspoon salt
½ cup coconut oil/ olive oil
½ cup pure maple syrup
¼ cup peanut butter
½ cup of dried fruit (optional)
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Combine oats, almonds, pepitas, coconut, cinnamon and salt in medium bowl.
Whisk oil, maple syrup and peanut butter in a small bowl and then pour over oat mixture. Stir until oats mixture is completely covered.
Spread evenly on the lined baking sheet. Bake in oven 20-25 minutes, mixing half way through until golden brown. Allow to cool on sheet then transfer to airtight bag or container. Can be stored up to a month in room temperature conditions.
Other ideas for add ins:
Chocolate chips- any of your choice but I would recommend the darker the chocolate the better.
Other types of nuts or nut butters
Chia seeds to add some protein and omega 3’s
Use granola in smoothies or acai bowls, as part of a parfait, as an oatmeal, baked fruit or ice cream topping, with milk of your choosing or as a simple snack throughout the day.
