It’s been a while since I posted any recipes that I have tried and liked. The recipe below is one I found after my doctor recommended I try consuming more leafy greens in the form of a smoothie to increase my calcium intake rather than through a daily supplement, which I have done for years since my total thyroidectomy in 2011. I was happy to take up the challenge of finding and trying something new. I have enjoyed drinking this rather than a full meal choosing to pair it with some crackers and hummus this past month with the temperatures continuing to be so hot here in TX. I have this one saved in the notes on my phone and am happy to share it with you now in this space.
I found this recipe at EatingWell.com
Ingredients:
2 Cups packed baby spinach- source of folate, calcium and plant based Iron.
I cup unsweetened plain almond milk- could use any milk of choice
1 small very ripe banana- add natural sweetness and potassium.
1/2 cup frozen mango chunks- source of fiber and antioxidants.
1/2 cup frozen pineapple chunks- good source of Vitamin C and contains Bromelain which has been shown to decrease inflammation and may decrease bloating.
1 Tablespoon chia seeds- add fiber and plant based protein while thickening the smoothie
Add milk to the blender first before adding the rest of the ingredients. Process in blender until smooth about 1 minute and serve in a large glass. Drink immediately
Personal Tips
I found individual good size bags of frozen pineapple and mango sold at Costco. I chose to buy them individually rather than one of the offered frozen smoothie bags because nothing is added just fruit in each bag.
